Apple Bread

If you are anything like me, you really enjoy baking. Especially, around this time of year. Yum! I think I've gained at least 10lbs since Halloween. :)

Anyway, I'm always looking for a new recipe to try out. I'm in love with Lola's pumpkin bread. I don't know if she has the recipe on her blog or not. But she made it for me, almost 2 years ago. After the first bite, I begged for the recipe. Ever since, I've made it at least once a month. And Alejandro's mom, makes the best banana bread ever! Is it bad, that I ate an entire loaf by myself?

I was looking for another sweet bread. Something yummy. When Lola sent me this recipe for Apple Bread. Yum! I've made it 3 times. And it's AMAZING! I just had to share it with you. I hope that you enjoy it too!


Ingredients

3 cups all-purpose flour
2 teaspoons cinnamon
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup vegetable oil
2 cups sugar
2 eggs, beaten
1/2 teaspoon vanilla
2 cups apples - peeled, cored, and coarsely chopped
1 cup broken walnuts

Directions

1.In bowl, combine flour, cinnamon, baking soda, baking powder and salt; set aside.

2.In large mixing bowl, place oil, sugar, eggs, vanilla and apples.

3. Stir into flour mixture.

4. Add walnuts and mix.

5. Divided mixture between two greased 8-in. x 4-in. bread pans.

6. Bake at 350 degrees F for 40-45 minutes or until bread test done.

7. Cool for 10 minutes on wire rack before removing from pan.
